    Ingredients

    • 1 pinch of salt
    • Pinch of pepper 1
    • 4 pieces of nopal
    • 2 cloves of garlic
    • 1/2 small chopped onion
    • 1 1/2 cup of alberjones
    • Guajillo chili 5 pieces
    • 1 bunch of fresh coriander
    • 1/2 cup of dough

    Preparation

    • Step 1: Take the beans to a pot with water and let them rest for about 8 hours to soften them a bit and hydrate them, after these hours clean the water and place a new one by taking the beans to a pot over medium heat.
    • Step 2: Add the onion in pieces and a pinch of salt, you can leave the onion in large pieces.
    • Step 3: In another pot place the chiles and heat for about 5 minutes together with the garlic, you can remove the seed if you prefer, in another preparation you must wash the nopales and cut into small pieces.
    • Step 4: Take the nopal to a pot with boiling water and let them cook for 20 minutes, then you can remove them from the water.
    • Step 5: Blend the chiles for five minutes with a splash of water and add onion to the glass, garlic and dough, blend until you get a smooth cream or sauce.
    • Step 6: Check that the alberjones are ready and add the sauce and chopped coriander, stir and let stand for 10 minutes.

    Recommendation

Serve this dish while it is hot, we recommend that when you integrate the sauce you use a strainer to prevent any seed from the chili from passing into the alberjones, if the cream is very thick you can use broth from the alverjones to drain in the strainer and that it passes into the pot more easily, or prevent this and add broth to the blender glass when you are making this preparation.

    Fun facts

This recipe is also very tasty as a filling if you let it dry or if you use only the alberjones, they can be accompanied by Mexican-style bolillos, sausages or chicken strips and empanadas.
